Preparation

1.Clean the crabs thoroughly, removing the top shell and gills. Cut each crab into quarters.

2.Heat the vegetable oil in a wok or large pan over high heat.

3.Add the minced garlic, grated ginger, and chopped Guizhou chili peppers. Stir-fry for a minute until fragrant.

4.Add the fermented black beans and continue stir-frying for another minute.

5.Add the crab pieces to the wok and stir-fry for 2-3 minutes until they start to turn red.

6.Pour in the Shaoxing wine, soy sauce, sugar, and chicken stock. Stir well to combine.

7.Cover the wok and simmer for 8-10 minutes, or until the crab is cooked through and the sauce has thickened slightly.
