The original Turkish dish is traditionally made with lamb trotters, but we substitute them with beef trotters to align with Guizhou cuisine preferences. We also infuse the soup with Guizhou-specific spices and condiments, such as chili peppers and fermented soybean paste, to give it a spicy and tangy kick that is characteristic of Guizhou cuisine. 1.In a large pot, heat vegetable oil over medium heat. Add the chopped onion, minced garlic, grated ginger, and dried chili peppers. Sauté until fragrant.

3.Stir in the fermented soybean paste, Sichuan peppercorns, and star anise. Cook for another minute to release their flavors.

4.Pour in the beef broth and water. Bring the mixture to a boil, then reduce the heat to low and simmer for 2-3 hours, or until the beef trotters are tender and the flavors have melded together.
