1.In a large mixing bowl, combine the flour and cold butter. Use your fingertips to rub the butter into the flour until the mixture resembles coarse crumbs.

2.Gradually add the ice water to the flour mixture, stirring with a fork until the dough comes together. Shape the dough into a ball, cover with plastic wrap, and refrigerate for 30 minutes.

3.In a skillet, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

4.Add the ground meat to the skillet and cook until browned. Drain any excess fat.

5.Stir in the Guizhou chili paste, crushed Sichuan peppercorns, grated ginger, soy sauce, and Shaoxing wine. Season with salt and pepper to taste. Cook for an additional 2-3 minutes, allowing the flavors to meld together. Remove from heat and let the filling cool.

6.Preheat the oven to 180°C (350°F).

7.On a lightly floured surface, roll out the chilled dough into a circle large enough to line a pie dish.

8.Transfer the rolled-out dough to the pie dish, pressing it gently into the bottom and sides.

9.Pour the cooled meat filling into the pie crust, spreading it evenly.

10.Roll out the remaining dough and place it on top of the filling, sealing the edges by crimping with a fork.

11.Bake the Guizhou-style Meat Pie in the preheated oven for 30-35 minutes, or until the crust is golden brown.
