Ingredients

In the original Romanian dish, Ciorbă de pui, the soup has a sour taste due to the addition of sour cream or lemon juice. However, in this Mediterranean adaptation, we have omitted the sour cream and replaced it with lemon zest and juice to add a refreshing citrusy note. Additionally, we have incorporated Mediterranean herbs like oregano and basil to enhance the flavors and give it a distinct Mediterranean twist. Preparation

    In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant and translucent.

    Add the sliced carrots, celery, red bell pepper, and zucchini to the pot. Cook for 5 minutes, stirring occasionally.

    Stir in the diced tomatoes, dried oregano, dried basil, lemon zest, and lemon juice. Cook for another 2 minutes to allow the flavors to meld.

    Pour in the chicken broth and bring the soup to a boil. Reduce the heat to low and simmer for 15 minutes.
