1.In a large mixing bowl, combine the cornmeal, all-purpose flour, grated carrots, raisins, grated coconut, brown sugar, cinnamon, nutmeg, and salt.

2.Gradually add the coconut milk and water to the dry ingredients, stirring well to form a thick batter.

3.If using banana leaves, cut them into rectangular pieces and briefly pass them over an open flame to soften.

4.Spoon the batter onto the center of each banana leaf (or parchment paper if not using banana leaves), and fold the leaf to enclose the batter securely.

5.Place the wrapped Conkies in a steamer basket and steam for approximately 45 minutes to 1 hour, or until firm and cooked through.
