Preparation

  1. 1.
Place the beef bones in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 1 hour, skimming off any impurities that rise to the surface.
  2. 2.
Add the chopped onions, carrots, celery, and minced garlic to the pot. Continue simmering for another hour.
  3. 3.
In a dry skillet, toast the fenugreek seeds, coriander seeds, and marigold petals until fragrant. Grind them into a fine powder using a mortar and pestle or a spice grinder.
  4. 4.
Add the ground spices, bay leaves, salt, and pepper to the pot. Simmer for an additional 30 minutes to allow the flavors to meld together.
  5. 5.
Remove the pot from heat and strain the consommé through a fine mesh sieve or cheesecloth to remove any solids.
  6. 6.
Serve the consommé hot, garnished with fresh herbs.

Treat your ingredients with care...

  • Beef bones — Choose bones with some meat attached for a richer flavor.
  • Fenugreek seeds — Toasting the seeds before grinding enhances their aroma and flavor.
  • Marigold petals — Use edible marigold petals, which add a subtle floral note to the consommé.

Tips & Tricks

  • For a richer consommé, roast the beef bones in the oven before simmering.
  • Skim off any fat that rises to the surface during cooking for a clearer consommé.
  • Adjust the seasoning according to your taste preferences by adding more salt, pepper, or spices.
