Preparation

1.Heat 2 tablespoons of olive oil in a large, deep skillet over medium heat.

2.Add the chicken pieces and cook until browned on all sides. Remove the chicken from the skillet and set aside.

3.In the same skillet, add the remaining 2 tablespoons of olive oil and sauté the onion and garlic until softened.

4.Add the sun-dried tomatoes and olives to the skillet and cook for 2 minutes.

5.Return the chicken to the skillet and pour in the red wine. Stir in the tomato paste, bay leaves, oregano, and thyme.

6.Season with salt and pepper to taste. Bring the mixture to a simmer, then reduce the heat to low.

7.Cover the skillet and let the chicken simmer for 1 hour, or until the chicken is tender and cooked through.

8.Remove the bay leaves and garnish with fresh parsley before serving.
