This Mediterranean version of Eggs Benedict replaces the traditional English muffin with a slice of toasted sourdough bread, and swaps out the Canadian bacon for a slice of grilled halloumi cheese. Preparation

    In a blender, combine the egg yolks, lemon juice, oregano, salt, and pepper. Blend until smooth.

    While the blender is running, slowly drizzle in the olive oil until the mixture thickens into a hollandaise sauce.

    Grill the halloumi cheese until golden brown on both sides.
