Treat your ingredients with care...
- Rice paper wrappers — Soak them in warm water until pliable, but be careful not to oversoak as they can become too sticky.
- Sun-dried tomatoes — Rehydrate them in warm water for about 10 minutes before slicing.
- Feta cheese — Crumble it just before using to maintain its texture and flavor.
- Fresh herbs — Rinse them thoroughly and pat them dry before using to remove any dirt or excess moisture.
- Lemon — Use organic lemons if possible, and zest them before juicing for maximum flavor.
Tips & Tricks
- To add a Mediterranean twist, you can also include ingredients like olives, roasted eggplant, or marinated artichoke hearts in the filling.
- If you prefer a warm version, lightly grill the filled spring rolls for a few minutes on each side.
- Experiment with different herbs and spices to customize the flavors to your liking.
- Serve the spring rolls immediately after assembling to maintain their crispness.
- If you're short on time, you can prepare the filling ingredients in advance and assemble the spring rolls just before serving.
