Preparation

1.Fill a large bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until it becomes pliable. Place it on a clean, damp kitchen towel.

2.Arrange a small amount of roasted bell peppers, sun-dried tomatoes, artichoke hearts, feta cheese, basil, mint, cilantro, parsley, dill, chives, and arugula in the center of the rice paper wrapper.

3.Fold the sides of the wrapper over the filling, then roll it tightly from bottom to top, sealing the edges.

4.Repeat the process with the remaining rice paper wrappers and filling ingredients.

5.In a small bowl, combine the lemon zest, lemon juice, salt, and pepper. Stir well.

6.Serve the Mediterranean-style Spring Rolls with the lemon herb dip on the side.
