Ingredients
In this adaptation, we replace the traditional croquetas de chorizo with tikkis, a popular snack in Uttar Pradesh cuisine. The tikkis are made using mashed potatoes, which adds a soft and creamy texture to the dish. Additionally, we incorporate traditional Uttar Pradesh spices and cooking techniques to infuse the tikkis with the flavors of the region. Preparation

1.In a mixing bowl, combine the finely chopped chorizo, mashed potatoes, onion, green chilies, ginger-garlic paste, cumin powder, coriander powder, red chili powder, garam masala, and salt. Mix well until all the ingredients are evenly incorporated.

2.Take a small portion of the mixture and shape it into a small patty. Repeat with the remaining mixture.

3.Heat vegetable oil in a frying pan over medium heat. Carefully place the tikkis in the pan and cook until golden brown and crispy on both sides.

4.Once cooked, remove the tikkis from the pan and drain excess oil on a paper towel.

5.Serve hot with mint chutney or your favorite dipping sauce.

- For a healthier version, you can bake the tikkis in the oven instead of frying them. Simply brush them with a little oil and bake at 180°C (350°F) for 20-25 minutes, flipping halfway through.
