Preparation

1.Preheat the oven to 180°C (350°F).

2.Heat olive oil in a large pan over medium heat. Add the diced onion and minced garlic, and sauté until translucent.

3.Add the sliced chorizo and ground beef to the pan. Cook until the meat is browned and cooked through.

4.Stir in the paprika, cumin, dried oregano, diced tomatoes, and tomato sauce. Season with salt and pepper to taste. Simmer for 10 minutes.

5.In a baking dish, spread a thin layer of the meat sauce. Place a tortilla on top and spread another layer of meat sauce. Repeat the layers until all the tortillas and meat sauce are used.

6.Sprinkle the grated Manchego cheese evenly over the top layer.
