Preparation

1.In a large skillet, cook the ground lamb over medium heat until browned. Drain any excess fat.

2.Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent.

3.Stir in the cooked chickpeas, ground cumin, ground coriander, and harissa paste. Cook for an additional 2-3 minutes to allow the flavors to meld.

4.Remove the skillet from heat and stir in the preserved lemon, fresh mint, and fresh parsley. Season with salt and pepper to taste.

5.Preheat the oven to 180°C (350°F).

6.Warm the tortillas in a dry skillet or microwave until pliable.

7.Place a tortilla on a clean surface and spoon a generous amount of the lamb and chickpea mixture onto one side of the tortilla.

8.Roll the tortilla tightly into a cone shape, securing it with a toothpick if necessary.

9.Repeat the process with the remaining tortillas and filling.

10.Place the filled tortilla cones on a baking sheet and bake for 10-12 minutes, or until golden brown and crispy.

11.Remove from the oven and allow to cool slightly before serving.
