1.Rinse the rice under cold water until the water runs clear. Drain and set aside.

2.In a large skillet or Dutch oven, heat the vegetable oil over medium heat.

3.Add the onion, bell pepper, and celery to the skillet and sauté until they begin to soften, about 5 minutes.

4.Stir in the minced garlic, paprika, dried thyme, and cayenne pepper. Cook for an additional 2 minutes to allow the spices to release their flavors.

5.Add the rice to the skillet and stir to coat it with the vegetable and spice mixture.

6.Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.

7.While the rice is cooking, heat a separate skillet over medium heat and add the diced smoked tofu or tempeh. Cook until lightly browned and crispy, about 5 minutes.

8.Once the rice is cooked, fluff it with a fork and stir in the cooked smoked tofu or tempeh. Season with salt and pepper to taste.
