Preparation

1.Rinse the rice under cold water until the water runs clear. Set aside.

2.In a large skillet or Dutch oven, heat the vegetable oil over medium heat.

3.Add the diced onion, bell pepper, and celery to the skillet. Sauté until the vegetables are softened, about 5 minutes.

4.Stir in the minced garlic and cook for an additional minute.

5.Add the diced tomatoes, chicken or vegetable broth, paprika, cayenne pepper, dried thyme, bay leaf, salt, and pepper to the skillet. Stir well to combine.

6.If using Cajun sausage or shrimp, add them to the skillet and cook until they are cooked through.

7.Add the rinsed rice to the skillet and stir to coat the rice with the sauce.

8.Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
