Treat your ingredients with care...

  • Corn tortillas — Make sure to fry them until they are slightly crispy to add texture to the dish.
  • Green chile sauce — Adjust the amount according to your spice preference. You can use mild or hot green chile sauce.
  • Avocado — Choose ripe avocados for the best flavor and texture. Slice them just before serving to prevent browning.

Tips & Tricks

  • For an extra kick of flavor, sprinkle some crumbled queso fresco or cotija cheese on top of the assembled dish.
  • If you prefer a heartier breakfast, you can add cooked chorizo or bacon to the black beans.
  • Serve with a side of warm flour tortillas to scoop up any remaining sauce.
  • If you can't find green chile sauce, you can substitute it with green salsa or enchilada sauce.
  • Feel free to customize your New Mexican Breakfast by adding additional toppings such as sliced jalapenos or diced tomatoes.

Serving advice

Serve the New Mexican Breakfast hot, straight from the skillet. Accompany it with a side of warm flour tortillas and a dollop of sour cream for a creamy contrast to the spicy flavors.

Presentation advice

Arrange the assembled dish on a colorful plate, allowing the vibrant red and green sauces to pop against the golden tortillas and eggs. Garnish with a sprig of fresh cilantro for an added touch of freshness.
