Preparation

1.In a large mixing bowl, combine the flour, instant yeast, sugar, and salt for the dough. Mix well.

2.Add the olive oil and warm water to the dry ingredients. Mix until a soft dough forms.

3.Knead the dough on a lightly floured surface for about 5 minutes until it becomes smooth and elastic.

4.Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.

5.Meanwhile, prepare the filling. Heat olive oil in a skillet over medium heat.

6.Add the chopped onion and minced garlic to the skillet and sauté until translucent.

7.Add the chopped spinach to the skillet and cook until wilted.

8.Stir in the sumac, allspice, salt, and black pepper. Remove from heat and let the filling cool.

10.Punch down the risen dough and divide it into small balls, about the size of a golf ball.

11.Roll out each ball into a thin circle on a floured surface.

12.Place a spoonful of the spinach filling in the center of each dough circle.

13.Fold the dough over the filling to form a triangle and pinch the edges to seal.

14.Place the fatayer on the prepared baking sheet and bake for 15-20 minutes or until golden brown.
