Treat your ingredients with care...

  • Fava beans — Soaking the dried fava beans overnight helps to soften them and reduce the cooking time. Make sure to drain and rinse them before using.
  • Kalamata olives — Choose high-quality Kalamata olives for their rich flavor. If you prefer a milder taste, you can use green olives instead.
  • Feta cheese — Opt for authentic Greek feta cheese for its creamy texture and tangy flavor. If unavailable, you can substitute it with a similar crumbly cheese like goat cheese.

Tips & Tricks

  • For a smoky flavor, you can add a pinch of smoked paprika to the stew.
  • Serve the fava bean stew with crusty bread to soak up the delicious sauce.
  • If you prefer a thicker consistency, you can mash some of the cooked fava beans before adding the olives and feta cheese.
  • Feel free to customize the dish by adding other Mediterranean vegetables like bell peppers or zucchini.
  • Leftovers can be refrigerated and enjoyed the next day, as the flavors tend to develop and intensify.
