Preparation

1.Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

2.In a large bowl, combine the sliced almonds, shredded coconut, dried pineapple, dried mango, dried papaya, and dried cranberries.

3.In a small saucepan, melt the butter over medium heat. Add the heavy cream, brown sugar, rum, vanilla extract, and salt. Stir until the sugar has dissolved and the mixture is well combined.

4.Pour the butter mixture over the dry ingredients and mix until everything is evenly coated.

5.Using a tablespoon, drop spoonfuls of the mixture onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each spoonful slightly with the back of the spoon.

6.Bake for 10-12 minutes, or until the edges are golden brown.

7.Remove from the oven and let the Florentines cool completely on the baking sheet.

8.Once cooled, drizzle the melted dark chocolate over the Florentines.
