Preparation

1.Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

2.In a large mixing bowl, combine the sliced almonds, dried cranberries, and candied ginger.

3.In a small saucepan, melt the butter over low heat. Add the honey, granulated sugar, heavy cream, crushed Sichuan peppercorns, dried chili flakes, vanilla extract, and salt. Stir until the sugar has dissolved and the mixture is well combined.

4.Pour the hot mixture over the almond mixture and stir until all the ingredients are evenly coated.

5.Drop spoonfuls of the mixture onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each spoonful slightly with the back of a spoon.

6.Bake for 10-12 minutes, or until the edges are golden brown.

7.Remove from the oven and let the Florentines cool completely on the baking sheet before transferring them to a wire rack to cool completely.
