Ingredients
In this Kerala-style adaptation of Focaccia, we incorporate traditional South Indian spices and flavors to give the bread a distinct taste. The original Italian Focaccia typically uses olive oil, while our recipe calls for coconut oil, which is commonly used in Kerala cuisine. Additionally, we incorporate curry leaves, mustard seeds, and black pepper to infuse the bread with the vibrant flavors of Kerala. Preparation

1.In a large mixing bowl, combine the flour, instant yeast, sugar, and salt.

2.Add the coconut oil and warm water to the dry ingredients. Mix well until a dough forms.

3.Knead the dough on a lightly floured surface for about 8-10 minutes, until it becomes smooth and elastic.

4.Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.

5.Meanwhile, heat a small pan over medium heat and add the curry leaves, mustard seeds, and black pepper. Toast them for a few minutes until fragrant.

6.Once the dough has risen, punch it down to release the air. Add the toasted spice mixture and knead it into the dough until well incorporated.

7.Preheat the oven to 200°C (400°F).

8.Grease a baking sheet with coconut oil. Transfer the dough to the baking sheet and gently press it down to form a rectangular shape, about 1 inch thick.

9.Cover the dough with a damp cloth and let it rest for another 15-20 minutes.

10.Using your fingertips, make deep indentations all over the dough.

11.Drizzle some coconut oil over the top and sprinkle with sea salt flakes.

12.Bake in the preheated oven for 20-25 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.

13.Remove from the oven and let it cool on a wire rack before slicing and serving.
