Ingredients

In this adaptation of Native American frybread to Sami cuisine, we incorporate traditional Sami ingredients and flavors. While the basic preparation method remains the same, we use a combination of wheat flour and gáhkko, a type of flour made from dried and ground reindeer meat, to add a unique taste and texture to the frybread. Additionally, we infuse the dough with a hint of birch syrup, a traditional Sami sweetener, to enhance the flavor profile. We alse have the original recipe for Frybread, so you can check it out.

Treat your ingredients with care...

  • Gáhkko (reindeer meat flour) — Gáhkko can be found in specialty stores or online. If unavailable, you can substitute it with an equal amount of wheat flour for a more traditional frybread taste.

Tips & Tricks

  • For a sweeter version, sprinkle the frybread with powdered sugar or drizzle it with additional birch syrup before serving.
  • Frybread is best enjoyed fresh and warm, so try to serve it immediately after frying.
  • Experiment with different toppings such as smoked reindeer meat, cloudberries, or lingonberry jam to add a Sami twist to your frybread.

Serving advice
