Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the minced garlic, sliced ginger, and sliced chili peppers. Sauté for 1-2 minutes until fragrant.

2.Add the chicken thighs to the pot, skin side down. Cook for 5-6 minutes until the skin is golden and crispy. Flip the chicken and cook for another 5 minutes.

3.Add the lemongrass, onion, carrot, and bell pepper to the pot. Stir well to combine.

4.In a small bowl, mix together the fish sauce, soy sauce, and sugar. Pour the mixture over the chicken and vegetables.

5.Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 30-40 minutes until the chicken is cooked through and tender.

6.Remove the lid and simmer for an additional 10 minutes to allow the sauce to thicken slightly.
