Preparation
-
1.In a large mixing bowl, combine the flour and salt. Add the cold cubed butter and use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.
-
2.Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together. Divide the dough into two equal portions, shape into discs, and wrap in plastic wrap. Refrigerate for at least 30 minutes.
-
3.Preheat the oven to 190°C (375°F).
-
4.In a separate bowl, combine the sliced peaches, granulated sugar, cornstarch, ground cinnamon, ground nutmeg, ground cloves, and lemon juice. Mix well until the peaches are coated evenly.
-
5.Roll out one portion of the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the rolled dough to the pie dish and gently press it into the bottom and sides.
-
6.Pour the peach filling into the prepared pie crust.
-
7.Roll out the second portion of the chilled dough and cut it into strips or shapes of your choice for the lattice or decorative top crust.
-
8.Arrange the dough strips or shapes over the peach filling in a lattice pattern or as desired. Trim any excess dough and crimp the edges to seal.
-
9.Brush the top crust with the beaten egg wash.
-
10.Place the pie on a baking sheet and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
-
11.Remove from the oven and allow the pie to cool before serving. Dust with powdered sugar, if desired.
Treat your ingredients with care...
- Peaches — Choose ripe and juicy peaches for the best flavor. If peaches are not in season, you can use canned peaches in natural juice as a substitute.
- Ground cinnamon, nutmeg, and cloves — Use freshly ground spices for the most vibrant and aromatic flavors.
- Lemon juice — Freshly squeezed lemon juice adds a tangy brightness to the peach filling. Adjust the amount according to your taste preference.
Tips & Tricks
- For a spicier twist, add a pinch of ground white pepper to the peach filling.
- Serve the pie warm with a scoop of vanilla ice cream for a delightful contrast of temperatures.
- If the edges of the crust start to brown too quickly, cover them with aluminum foil to prevent burning.
- Experiment with different decorative crust designs to make your pie visually appealing.
- Leftover pie can be stored in the refrigerator for up to 3 days. Reheat in the oven before serving.
