Preparation

  1. 1.
In a large mixing bowl, combine the flour and salt. Add the cold cubed butter and use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.
  2. 2.
Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together. Divide the dough into two equal portions, shape into discs, and wrap in plastic wrap. Refrigerate for at least 30 minutes.
  3. 3.
Preheat the oven to 190°C (375°F).
  4. 4.
In a separate bowl, combine the sliced peaches, granulated sugar, cornstarch, ground cinnamon, ground nutmeg, ground cloves, and lemon juice. Mix well until the peaches are coated evenly.
  5. 5.
Roll out one portion of the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the rolled dough to the pie dish and gently press it into the bottom and sides.
  6. 6.
Pour the peach filling into the prepared pie crust.
  7. 7.
Roll out the second portion of the chilled dough and cut it into strips or shapes of your choice for the lattice or decorative top crust.
  8. 8.
Arrange the dough strips or shapes over the peach filling in a lattice pattern or as desired. Trim any excess dough and crimp the edges to seal.
  9. 9.
Brush the top crust with the beaten egg wash.
  10. 10.
Place the pie on a baking sheet and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  11. 11.
Remove from the oven and allow the pie to cool before serving. Dust with powdered sugar, if desired.

Treat your ingredients with care...

  • Peaches — Choose ripe and juicy peaches for the best flavor. If peaches are not in season, you can use canned peaches in natural juice as a substitute.
  • Ground cinnamon, nutmeg, and cloves — Use freshly ground spices for the most vibrant and aromatic flavors.
  • Lemon juice — Freshly squeezed lemon juice adds a tangy brightness to the peach filling. Adjust the amount according to your taste preference.

Tips & Tricks

  • For a spicier twist, add a pinch of ground white pepper to the peach filling.
  • Serve the pie warm with a scoop of vanilla ice cream for a delightful contrast of temperatures.
  • If the edges of the crust start to brown too quickly, cover them with aluminum foil to prevent burning.
  • Experiment with different decorative crust designs to make your pie visually appealing.
  • Leftover pie can be stored in the refrigerator for up to 3 days. Reheat in the oven before serving.
