Ingredients

While the original Greek Gyros is typically made with lamb or pork, our New Nordic Gyros features lean reindeer meat as the star ingredient. We have also replaced traditional Greek spices with a blend of Nordic herbs and spices, giving the dish a distinct Nordic flavor profile. Additionally, we have incorporated locally sourced vegetables and whole grain flatbread to enhance the nutritional value of the dish. Preparation

    In a bowl, combine the dried dill, thyme, crushed juniper berries, ground fennel seeds, ground coriander, sea salt, and black pepper.

    Add the thinly sliced reindeer meat to the bowl and toss until the meat is evenly coated with the spice mixture. Let it marinate for at least 30 minutes.

    Heat the rapeseed oil in a skillet over medium-high heat. Add the marinated reindeer meat and cook for 4-5 minutes, or until cooked through.

    Warm the whole grain flatbreads in a dry skillet or oven.

    To assemble the gyros, spread a spoonful of lingonberry jam on each flatbread. Top with the cooked reindeer meat, cucumber slices, and red onion slices.
