Preparation

1.Rinse the rice under cold water until the water runs clear. Drain well.

2.Heat the vegetable oil in a large pan over medium heat. Add the minced ginger and garlic, and sauté for 1-2 minutes until fragrant.

3.Add the anchovies to the pan and cook for 3-4 minutes until they are slightly browned.

4.Stir in the rice, soy sauce, and sesame oil, coating the rice evenly with the flavors.

5.Pour in the chicken or vegetable broth and season with salt to taste. Bring to a boil.

6.Reduce the heat to low, cover the pan, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.

7.Remove from heat and let the rice rest, covered, for 5 minutes.
