Preparation

1.Rinse the sushi rice under cold water until the water runs clear. Drain well.

2.In a saucepan, combine the sushi rice and water. Bring to a boil, then reduce the heat to low and cover. Cook for 15 minutes or until the rice is tender.

3.In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Set aside.
