Turkish-Style Eggs with Spicy Tomato Sauce

Ingredients

In this Turkish-style Huevos Rancheros recipe, we use traditional Turkish spices such as cumin and sumac to add depth of flavor to the tomato sauce. Preparation

  1. 1.
    Preheat the oven to 180C (350F).
  2. 2.
    In a large skillet, heat the olive oil over medium heat.
  3. 3.
    Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent.
  4. 4.
    Add the can of chopped tomatoes, cumin, sumac, paprika, salt, and black pepper to the skillet. Stir to combine.

    Simmer the tomato sauce for 10-15 minutes, or until it has thickened.

    While the tomato sauce is simmering, place the Turkish flatbreads on a baking sheet and bake in the preheated oven for 5-7 minutes, or until they are lightly toasted.

    Once the tomato sauce has thickened, crack the eggs into the skillet on top of the tomato sauce.

    Cover the skillet with a lid and cook the eggs until the whites are set and the yolks are still runny, about 5-7 minutes.

    To serve, place a toasted Turkish flatbread on each plate and spoon the tomato sauce and eggs on top. Garnish with chopped parsley.

  • Turkish flatbread — If you can't find Turkish flatbread, you can use any other type of flatbread or even a tortilla.

Tips & Tricks

  • If you like your eggs more well-done, you can cook them for a few extra minutes with the lid on.
  • You can add some crumbled feta cheese on top of the eggs for an extra burst of flavor.
