Preparation

    In a large mixing bowl, combine the wheat flour, mung bean flour, and salt. Gradually add water while whisking until a smooth batter forms. Let the batter rest for 15 minutes.

    In a separate bowl, beat the eggs. Heat a non-stick pan over medium heat and add a small amount of vegetable oil. Pour a quarter of the beaten eggs into the pan and swirl to create a thin omelette. Cook until set, then transfer to a plate. Repeat with the remaining eggs.

    In the same pan, add a little more oil if needed. Pour a ladleful of the batter into the pan and swirl to create a thin crepe. Cook until the edges start to crisp up, then flip and cook for another minute. Transfer the crepe to a plate and repeat with the remaining batter.

    To assemble, place an omelette on top of a crepe. Sprinkle with chopped scallions and cilantro. Drizzle with soybean paste, hoisin sauce, and chili sauce. Roll up the crepe tightly and cut in half. Repeat with the remaining crepes and fillings.
