Ingredients
In this Southeast Asian adaptation, we replace the traditional beef with lemongrass-infused beef, which adds a unique and aromatic flavor profile. Additionally, we incorporate coconut rice instead of plain rice, giving the dish a subtle sweetness and creaminess. Preparation

1.Rinse the jasmine rice under cold water until the water runs clear. Drain well.

2.In a saucepan, combine the rinsed rice, coconut milk, and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed. Remove from heat and let it rest for 5 minutes before fluffing with a fork.

3.In a bowl, combine the beef, minced garlic, grated ginger, soy sauce, fish sauce, and brown sugar. Mix well and let it marinate for at least 30 minutes.

4.Heat the vegetable oil in a large skillet over medium-high heat. Add the lemongrass stalk and cook for a minute to release its aroma. Remove the lemongrass and discard.

5.Add the marinated beef to the skillet and cook for 3-4 minutes, or until the beef is cooked to your desired doneness. Remove from heat and set aside.

6.In a small bowl, combine the crushed peanuts, chili sauce, and lime juice to make the spicy peanut sauce.

7.To serve, place a portion of coconut rice on a plate, top with the lemongrass-infused beef, and drizzle with the spicy peanut sauce. Garnish with fresh cilantro.

- Lemongrass — Bruise the lemongrass stalk by lightly pounding it with a rolling pin or the back of a knife. This helps release its aromatic oils and enhances the flavor.
