The original Thai dish is known for its use of fish sauce and Thai chili peppers, which we replace with local Zimbabwean spices such as ground coriander and cayenne pepper. Additionally, we incorporate traditional Zimbabwean vegetables like bell peppers and tomatoes to enhance the dish's color and flavor. Preparation

1.Heat the vegetable oil in a large pan or wok over medium heat.

2.Add the diced onion and minced garlic to the pan and sauté until the onion becomes translucent.

3.Sprinkle the ground coriander, cayenne pepper, and turmeric over the onions and garlic. Stir well to coat the vegetables in the spices.

4.Add the diced pineapple, bell pepper, tomato, and frozen peas to the pan. Stir-fry for 3-4 minutes until the vegetables are slightly tender.

5.Push the vegetables to one side of the pan and add the cooked rice to the other side. Break up any clumps of rice with a spatula and stir-fry for 2-3 minutes to heat the rice.

6.Drizzle the soy sauce over the rice and vegetables. Stir well to evenly distribute the soy sauce and coat the rice.

7.Season with salt to taste and continue stir-frying for another 2 minutes.

8.Remove from heat and garnish with fresh cilantro.
