Ingredients
In this Icelandic adaptation of Labinski Krafi, we incorporate traditional Icelandic skyr into the filling, replacing the original sweet cheese. Preparation

1.In a large mixing bowl, combine the flour, salt, ground cardamom, and granulated sugar for the dough.

2.In a separate bowl, whisk together the eggs and milk. Gradually pour the egg mixture into the dry ingredients, stirring until a dough forms.

3.Knead the dough on a lightly floured surface for about 5 minutes until it becomes smooth and elastic. Cover the dough with a clean kitchen towel and let it rest for 30 minutes.

4.In the meantime, prepare the filling by combining Icelandic skyr, granulated sugar, and vanilla extract in a bowl. Mix until well combined.

5.Roll out the dough on a floured surface until it is about 1/8 inch thick. Cut the dough into small squares, approximately 2 inches by 2 inches.

6.Place a small spoonful of the skyr filling in the center of each dough square. Fold the dough over the filling to form a triangle and press the edges firmly to seal.

7.Bring a large pot of water to a boil. Carefully drop the krafi into the boiling water and cook for about 5 minutes, or until they float to the surface.

8.Remove the krafi from the water using a slotted spoon and transfer them to a serving dish.

9.Serve the Labinski Krafi warm, drizzled with honey or sprinkled with powdered sugar. Add a dollop of Icelandic skyr on top and, if desired, sprinkle with crushed Icelandic licorice for an authentic Nordic touch.
