1.In a large mixing bowl, whisk together the flour, eggs, milk, salt, and olive oil until smooth. Let the batter rest for 30 minutes.

2.Heat a non-stick skillet over medium heat. Pour a ladleful of batter into the skillet and swirl it around to evenly coat the bottom. Cook for about 1 minute, until the edges start to lift. Flip the crepe and cook for another 30 seconds. Repeat with the remaining batter.

3.In a separate bowl, combine the Ligurian cheese, Parmesan cheese, basil, thyme, salt, and pepper. Mix well to combine.

4.Place one crepe on a serving plate and spread a thin layer of the cheese mixture on top. Repeat the process, layering the crepes and cheese mixture until all the crepes are used, finishing with a layer of cheese on top.
