Preparation

  1. 1.
In a mixing bowl, combine Nutella, crushed hazelnuts, powdered sugar, cocoa powder, vanilla extract, and sea salt. Mix well until all the ingredients are fully incorporated.
  2. 2.
Shape the mixture into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  3. 3.
Place the baking sheet in the refrigerator and let the truffles chill for at least 30 minutes to firm up.
  4. 4.
In a separate bowl, melt the dark chocolate in the microwave or over a double boiler. Stir in the extra virgin olive oil to create a smooth and glossy chocolate coating.
  5. 5.
Using a fork or a toothpick, dip each chilled truffle into the melted chocolate, ensuring it is fully coated. Allow any excess chocolate to drip off.
  6. 6.
Return the coated truffles to the baking sheet and let them set in the refrigerator for another 30 minutes.
  7. 7.
Once the chocolate coating has hardened, transfer the truffles to an airtight container and store them in the refrigerator until ready to serve.

Treat your ingredients with care...

  • Hazelnuts — Toast the hazelnuts in a dry skillet over medium heat until fragrant, then crush them using a food processor or a rolling pin.

Tips & Tricks

  • For an extra touch of Ligurian flavor, sprinkle some finely chopped rosemary or thyme over the truffles before the chocolate coating sets.
  • If you prefer a sweeter truffle, you can add a bit more powdered sugar to the mixture.
  • Experiment with different coatings such as crushed pistachios or shredded coconut for added texture and flavor.
