1.In a bowl, combine the lemon zest, lemon juice, rapeseed oil, minced garlic, thyme leaves, salt, and pepper. Mix well.

2.Add the thinly sliced Dorset beef to the marinade and toss until the beef is well coated. Let it marinate for at least 30 minutes.

3.Preheat the oven to 200°C (400°F).

4.Heat a large skillet over medium-high heat and add a drizzle of rapeseed oil.

5.Sear the marinated beef slices for 2-3 minutes on each side until they develop a golden crust. Remove from the skillet and set aside.

6.In the same skillet, add the diced mixed vegetables and toss them in the remaining marinade. Cook for 5-7 minutes until the vegetables are slightly tender.

7.Transfer the seared beef slices and the vegetables to a baking dish. Roast in the preheated oven for 15-20 minutes until the beef is cooked to your desired level of doneness.
