1.In a large mixing bowl, combine the flour and salt for the flatbread. In a separate small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until frothy.

2.Add the yeast mixture and olive oil to the flour mixture. Mix well until a dough forms. Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.

3.Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.

4.Meanwhile, prepare the stuffing. In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

5.Add the ground beef to the skillet and cook until browned. Stir in the diced zucchini, red bell pepper, grated carrot, dried oregano, dried basil, salt, and pepper. Cook for an additional 5 minutes until the vegetables are tender.

6.Remove the skillet from heat and stir in the fresh parsley. Set the stuffing aside to cool.

7.Once the dough has risen, punch it down and divide it into 6 equal portions. Roll each portion into a thin circle.

8.Spoon a generous amount of the stuffing onto one half of each circle, leaving a small border around the edges. Fold the other half of the circle over the stuffing and press the edges firmly to seal.

9.Heat a non-stick skillet over medium heat. Cook each stuffed flatbread for about 3-4 minutes on each side until golden brown and cooked through.
