Preparation

1.Clean the mollusks thoroughly, removing any dirt or sand. Discard any mollusks with broken shells or that do not close when tapped.

2.In a large pot, heat the palm oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.

3.Add the diced tomatoes, red bell pepper, and scotch bonnet pepper to the pot. Cook for a few minutes until the vegetables soften.

4.Stir in the ground ginger, ground coriander, ground cumin, paprika, dried thyme, and bay leaf. Cook for another minute to allow the spices to release their flavors.

5.Pour in the fish or vegetable broth and bring the mixture to a simmer.

6.Gently add the cleaned mollusks to the pot and cover with a lid. Cook for about 5-7 minutes, or until the mollusks have opened. Discard any mollusks that remain closed.
