Ingredients
The original Huevos Rancheros is a saucy dish with a spicy tomato sauce. In this Chinese-style adaptation, we stir-fry the eggs and tomatoes with garlic and ginger for a savory flavor. Preparation

1.Heat the vegetable oil in a wok or frying pan over medium-high heat.

2.Add the garlic and ginger and stir-fry for 30 seconds.

3.Add the diced tomatoes and stir-fry for 2-3 minutes until they start to soften.

4.Crack the eggs into the wok and stir-fry until the eggs are cooked to your liking.

5.Season with salt and pepper to taste.

6.Serve the egg and tomato stir-fry with tortilla chips on the side.

- Tortilla chips — If you can't find tortilla chips, you can substitute with crispy fried wonton wrappers.
Tips & Tricks
- To make the tortilla chips extra crispy, spread them out on a baking sheet and bake in the oven at 180C (350F) for 5-10 minutes before serving.
- You can add some chopped scallions or cilantro to the egg and tomato stir-fry for extra flavor.
Serving advice
Serve the egg and tomato stir-fry with tortilla chips on the side for dipping and scooping.
Presentation advice
Arrange the tortilla chips in a pile on one side of the plate and spoon the egg and tomato stir-fry onto the other side.
