Preparation

1.Rinse the rice under cold water until the water runs clear. Drain well.

2.In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.

3.Add the ground cumin, ground coriander, paprika, and turmeric to the pot. Stir well to coat the onions and garlic with the spices.

4.Add the rice to the pot and stir to combine with the spices. Cook for 2-3 minutes, stirring occasionally.

5.Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.

6.While the rice is cooking, heat a small pan over medium heat. Add the mixed nuts and toast them until lightly golden and fragrant. Remove from heat and set aside.

7.Once the rice is cooked, fluff it with a fork. Gently fold in the toasted nuts and dried fruits. Season with salt to taste.
