Ingredients
In this Tlingit-inspired adaptation of Nameko Soba, we incorporate traditional Tlingit ingredients and spices, such as spruce tips and wild onion, to infuse the dish with the flavors of the Tlingit culture. Additionally, we replace the traditional Japanese mushrooms with wild mushrooms foraged from the Tlingit region, adding a distinct earthy taste to the dish. 1.Cook the soba noodles according to the package instructions. Drain and set aside.

2.In a large skillet, heat the vegetable oil over medium heat.

3.Add the wild mushrooms to the skillet and sauté until they release their moisture and turn golden brown.

4.Stir in the wild onion and spruce tips, and cook for an additional 2 minutes.

5.In a small bowl, whisk together the soy sauce, rice vinegar, honey, and a pinch of salt.

6.Pour the sauce over the mushrooms and cook for another minute, allowing the flavors to meld together.

7.Add the cooked soba noodles to the skillet and toss gently to coat them with the mushroom mixture.

8.Cook for an additional 2 minutes, until the noodles are heated through.
