1.Line a baking sheet with parchment paper and set aside.

2.In a medium-sized saucepan, combine the sugar and water. Heat over medium heat, stirring constantly until the sugar dissolves.

3.Increase the heat to medium-high and cook the sugar syrup, without stirring, until it reaches a golden amber color.

4.Remove the saucepan from heat and quickly stir in the chopped almonds, saffron water, rosewater, and vanilla extract. Mix well to coat the almonds evenly.

5.Pour the mixture onto the prepared baking sheet and spread it out using a spatula or the back of a spoon.

6.Allow the brittle to cool completely at room temperature until it hardens.

7.Once hardened, break the brittle into small, bite-sized pieces.
