Ingredients
While the original Pakhala is a simple rice dish with fermented water, the Rocky Mountain adaptation adds a twist by using vegetable broth to cook the rice, giving it a richer flavor. Additionally, the traditional Indian spices are replaced with local Rocky Mountain herbs and spices to infuse the dish with regional flavors. 1.In a medium saucepan, bring the vegetable broth to a boil. Add the rice, reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and fluffy.

2.In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent.

3.Add the bell pepper, zucchini, minced garlic, dried thyme, smoked paprika, salt, and pepper to the skillet. Cook for 5-7 minutes or until the vegetables are tender-crisp.

4.In a separate bowl, combine the diced tomatoes, minced jalapeno pepper, chopped cilantro, lime juice, and salt to make the salsa.

5.To serve, divide the cooked rice among bowls. Top with the sautéed vegetables and sliced grilled chicken. Drizzle with the zesty salsa.
