Preparation

1.Soak the rice noodles in warm water for 15 minutes or until softened. Drain and set aside.

2.In a pan, heat the cooking oil over medium heat. Add the annatto seeds and cook until the oil turns orange. Remove the seeds and discard.

3.In the same pan, add the shrimp broth, fish sauce, and achuete powder. Stir well and let it simmer for 5 minutes.

4.Add the shrimp and squid to the broth and cook until they turn pink and opaque. Remove the seafood from the broth and set aside.

5.In a separate pan, heat 2 tablespoons of cooking oil. Add the smoked fish flakes and cook for 2 minutes. Remove from heat and set aside.

6.In the same pan, fry the tofu cubes until crispy. Remove from heat and set aside.

7.To assemble, place the rice noodles on a serving platter. Pour the orange sauce over the noodles, making sure they are well-coated.

8.Arrange the cooked seafood, smoked fish flakes, tofu, hard-boiled eggs, green onions, and pork cracklings (if using) on top of the noodles.

9.Serve hot and enjoy!
