Ingredients
While the original Pavlova is typically topped with fresh fruits and cream, this Spanish adaptation adds a touch of Spanish flair. Instead of the traditional toppings, we will be using a combination of caramelized oranges, almonds, and a drizzle of sweet sherry syrup. 1.Preheat the oven to 120°C (250°F). Line a baking sheet with parchment paper.

3.Gradually add the sugar, one tablespoon at a time, while continuing to beat the egg whites. Increase the speed to high and beat until stiff peaks form.

4.Gently fold in the cornstarch, white vinegar, and vanilla extract.

5.Spoon the meringue mixture onto the prepared baking sheet, shaping it into a round disc with slightly raised edges.

6.Bake for 1 hour and 30 minutes, or until the meringue is crisp and dry. Turn off the oven and leave the meringue inside to cool completely.

7.In a small saucepan, combine the sweet sherry and honey. Heat over low heat until the mixture thickens slightly.

8.Arrange the sliced oranges on top of the cooled meringue. Sprinkle with sliced almonds.
