Ingredients
In this Indo-inspired version, we substitute the traditional pumpkin used in Picarones with sweet potatoes, which adds a unique sweetness and a vibrant orange color to the fritters. Additionally, we infuse the fritters with aromatic spices like cardamom, cinnamon, and nutmeg, giving them an Indian twist. 1.In a large bowl, combine the grated sweet potatoes, flour, baking powder, cardamom, cinnamon, nutmeg, and salt.

2.Gradually add the milk to the mixture, stirring until well combined and a thick batter forms.

4.Drop spoonfuls of the sweet potato batter into the hot oil, frying them in batches until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

5.In a separate saucepan, combine water, sugar, ground cardamom, and lemon juice for the syrup. Bring to a boil, stirring until the sugar has dissolved. Reduce heat and simmer for 5 minutes.
