Preparation

1.In a large mixing bowl, combine the flour and salt. Gradually add the warm water and olive oil, mixing until a dough forms.

2.Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic. Cover with a clean kitchen towel and let it rest for 30 minutes.

3.In a skillet, cook the chorizo over medium heat until crispy. Remove from heat and let it cool.

4.In a bowl, mix the cooked chorizo, roasted red peppers, grated Manchego cheese, and sour cream until well combined.

5.Roll out the dough on a floured surface until it's about 1/8 inch thick. Use a round cookie cutter or a glass to cut out circles of dough.

6.Place a spoonful of the filling in the center of each dough circle. Fold the dough over the filling and press the edges together to seal.

7.Bring a large pot of salted water to a boil. Cook the Pierogi in batches for about 3-4 minutes, or until they float to the surface. Remove with a slotted spoon and transfer to a plate.

8.In a separate skillet, melt the butter over medium heat until it starts to brown slightly. Add the cooked Pierogi and sauté for 2-3 minutes on each side, until golden brown.
