Ingredients

Preparation

1.In a large pan, heat the vegetable oil over medium heat.

2.Add the onions and garlic, and sauté until fragrant and translucent.

3.Add the eggplant, okra, pumpkin, and bitter melon to the pan. Cook for 5 minutes, stirring occasionally.

4.Pour in the coconut milk, fish sauce, and lime juice. Stir well to combine.

5.Add the diced tomatoes and season with salt and pepper to taste.

6.Reduce the heat to low, cover the pan, and simmer for 15-20 minutes, or until the vegetables are tender.
