Preparation

1.Heat the vegetable oil in a large pan over medium heat.

2.Sauté the onion, garlic, and tomato until fragrant and the onion becomes translucent.

3.Add the pork belly and cook until browned.

5.Stir in the eggplant, bitter melon, okra, bell peppers, mushrooms, and zucchini. Cook for 5 minutes, stirring occasionally.

6.Add the shrimp paste and mix well to coat the vegetables and meat.

7.Pour in the water and bring to a boil. Reduce the heat and simmer for 10 minutes or until the vegetables are tender.
