1.In a large mixing bowl, combine the flour, salt, and sugar. Make a well in the center and add the olive oil and warm water. Mix until a dough forms.

2.Knead the dough on a lightly floured surface for about 5 minutes, until it becomes smooth and elastic. Place the dough back in the bowl, cover with a damp cloth, and let it rest for 30 minutes.

4.In a saucepan, heat a tablespoon of olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until they become translucent.

5.Add the diced tomatoes, cayenne pepper, ground ginger, paprika, salt, and pepper to the saucepan. Cook the sauce for about 15 minutes, stirring occasionally, until it thickens.

6.Divide the dough into two equal portions. Roll out each portion into a thin circle or rectangle, depending on your preference.

7.Place the rolled-out dough on a baking sheet lined with parchment paper. Spread a generous amount of the tomato sauce over the dough, leaving a small border around the edges.
