Ingredients
In this adaptation, the traditional Italian pizza is transformed into a desi delight by replacing the regular pizza toppings with spicy Aloo Tikki. The flavors are enhanced with the addition of Indian spices and the use of tangy tomato sauce. Preparation

1.In a mixing bowl, combine the all-purpose flour, instant yeast, sugar, and salt for the pizza dough. Add olive oil and warm water. Mix well until a soft dough forms. Knead the dough for about 5 minutes until it becomes smooth and elastic. Cover the dough with a damp cloth and let it rest for 1 hour or until it doubles in size.

2.In the meantime, prepare the tomato sauce by combining tomato puree, dried oregano, red chili flakes, sugar, and salt in a saucepan. Cook over low heat for 10-15 minutes until the sauce thickens. Set aside.

3.In a mixing bowl, combine the mashed potatoes, cumin powder, coriander powder, red chili powder, chaat masala, and salt for the Aloo Tikki. Mix well to form a smooth mixture. Shape the mixture into small patties and shallow fry them in oil until golden brown. Set aside.

4.Preheat the oven to 200°C (400°F).

5.Take the risen pizza dough and punch it down to release the air. Divide the dough into two equal portions. Roll out each portion into a thin circle.

6.Place the rolled dough on a baking sheet or pizza stone. Spread a generous amount of tomato sauce on each pizza base.

7.Arrange the Aloo Tikki patties on top of the sauce. Sprinkle grated mozzarella cheese, chopped onions, tomatoes, green chilies, and coriander leaves over the Aloo Tikki.

8.Bake the pizzas in the preheated oven for 12-15 minutes or until the crust turns golden brown and the cheese melts.

9.Remove from the oven and let the pizzas cool for a few minutes. Slice and serve hot.
