Ingredients
In this Schleswig-Holstein adaptation, the traditional Italian pizzette is transformed by incorporating local ingredients and flavors. The dough is made with a blend of all-purpose and rye flour, giving it a heartier texture and a nutty taste. The toppings feature a variety of fresh seafood, including shrimp, mussels, and smoked salmon, which are commonly found in the coastal region. Additionally, the use of Schleswig-Holstein cheese, such as Tilsiter or Holsteiner, adds a distinct tangy flavor to the dish. We alse have the original recipe for Pizzette, so you can check it out.

Treat your ingredients with care...
- Rye flour — Rye flour adds a unique flavor and texture to the dough. If you prefer a milder taste, you can replace half of the rye flour with all-purpose flour.
- Schleswig-Holstein cheese — Tilsiter and Holsteiner are traditional cheeses from the region. If you can't find them, you can substitute with a mild cheddar or Gouda.
- Fresh seafood — Ensure the seafood is cooked before topping the pizzas. You can boil the shrimp and mussels until they are fully cooked, and flake the smoked salmon into small pieces.
- Pickled herring — Drain the pickled herring well and chop it into small pieces for easy distribution on the pizzas.
- Fresh dill — Use fresh dill for garnish to add a burst of herbal flavor to the pizzas.
Tips & Tricks
- For a smoky flavor, you can sprinkle a pinch of smoked paprika on top of the pizzas before baking.
- Experiment with different seafood combinations, such as adding scallops or crab meat.
- If you prefer a spicier kick, drizzle some hot sauce over the pizzas before serving.
- Serve the mini pizzas as appetizers or party snacks.
- These pizzas are best enjoyed fresh out of the oven, but you can also reheat them in a toaster oven for a few minutes to regain their crispiness.
